Peach Tomato Bruschetta

Bruschetta is a classic appetizer and I love the traditional tomato version, but I also LOVE adding sweet juicy peaches during the summer months. The peach and tomato combo is summer perfection.

I love this appetizer (or snack) because it’s so easy to make and is always a crowd pleaser. Top toasted baguette slices with the peach, tomato, garlic, basil, olive oil mixture and you have a GORGEOUS and delicious appetizer.

If you want to go ALL out, you can spread the baguette slices with whipped cottage cheese or whipped feta. I highly recommend you try it because the creamy cheese with the sweet, juicy peaches and tomatoes is DREAMY!

Drizzle with honey or hot honey to take the bruschetta to a 12/10!! You will be eating this one all summer long!

Ingredients

  • Tomatoes– I like to use grape tomatoes, but cherry tomatoes or regular tomatoes will work too. Use a knife to chop them up!
  • Peaches– use ripe and juicy peaches for best results. Nectarines will also work.
  • Olive oil– to drizzle over the tomatoes and peaches and for brushing the baguette.
  • Basil– finely chopped.
  • French baguette– cut into 1/2-inch thick slices.
  • Garlic– for brushing on the toasted baguette slices.
  • Whipped Cottage Cheese or Whipped Feta– spread the creamy, salty cheese on the toasted baguette slices. The cheese is optional, but SO good.
  • Honey or Hot Honey– for drizzling on top! The honey brings out the sweetness in the peaches. If you don’t want to use honey, you can use balsamic glaze.

How to Make Peach Bruschetta

  • Preheat oven to 450 degrees F.
  • In a medium bowl, combine the tomatoes, peaches, 1 tablespoon olive oil, basil, salt, and pepper.

  • The peaches and tomatoes will become more juicy and develop more flavors as they sit. Keep them at room temperature while you toast the baguette slices.

  • Place the baguette slices on a large baking sheet. You might need to use 2 sheets. Brush the tops of the baguette slices with olive oil. Place the baking sheets in the oven and bake until bread slices are toasted, about 5 minutes.

  • Remove from the oven and rub the garlic over the toasted bread, pressing slightly into the bread.

Ingredients
  

  • 1 pint grape tomatoes, chopped
  • 3 medium peaches, diced
  • 1 tablespoon olive oil
  • 2 to 3 tablespoons finely chopped fresh basil
  • Kosher salt and freshly ground black pepper, to taste
  • 1 French baguette, cut into 1/2-inch thick slices
  • Olive oil, for brushing bread
  • 2 cloves garlic, peeled
  • Whipped Cottage Cheese, optional but so good
  • Honey or hot honey, for drizzling (or use balsamic glaze)

  • Preheat oven to 450 degrees F.
  • In a medium bowl, combine the tomatoes, peaches, 1 tablespoon olive oil, basil, salt, and pepper. Let sit while you toast the bread.
  • Place the baguette slices on a large baking sheet. You might need to use 2 sheets. Brush the tops of the baguette slices with olive oil. Place the baking sheets in the oven and bake until bread slices are toasted, about 5 minutes. Remove from the oven and rub the garlic over the toasted bread, pressing slightly into the bread.
  • Spread each piece of bread with whipped cottage cheese (or whipped feta), if using. Top with peach tomato topping and drizzle with honey. Serve!

Notes

You can also spread the bread with whipped feta. If you don’t want to use honey, you can drizzle with balsamic glaze.

    This is a perfect summer appetizer. Fresh, colorful, flavorful and easy to make! I made it for a dinner party and it was devoured. I served it with the whipped feta which made more than I needed for the bruschetta so I’m glad I had leftovers to use as a dip for veggies the next day. Will definitely make this again!
